INDIAN MASALA TEA
Ingredients
2-3 cups water
3-4 teaspoons of loose black tea leaves (Assam or Darjeeling tea works well)
1 cinnamon stick
3-4 whole green cardamom pods, lightly crushed
2-3 whole cloves
0.5-inch piece of fresh ginger, peeled and thinly sliced
½ teaspoons of whole black peppercorns
1-2 tablespoons jaggery or sugar
1-2 cups of milk (dairy or non-dairy, as per preference)
Instruction
In a large saucepan, bring the water to a boil over medium heat. Add the cinnamon stick, crushed cardamom pods, cloves, sliced ginger, and black peppercorns to the boiling water. Once all the above masala chai ingredients are added,
reduce the heat to low and let the spices simmer in the water for about 5-6 minutes to infuse the flavors. Add the black tea bags or loose black tea leaves to the saucepan.
Allow the tea to steep in the spiced water for another 3-4 minutes, depending on how strong you prefer your tea. Stir in the jaggery or sugar to sweeten the tea, adjusting the amount according to your taste preference. Pour in the milk, stirring gently to combine. Allow the chai to simmer for an additional 2-3 minutes.
